 Sodium pyrophosphate usually exists in two forms, decahydrate and anhydrous. The water solution is alkaline and insoluble in alcohol. Whether industrial or food grade sodium pyrophosphate/TSPP, the use of anhydrous substance is greater than that of sodium pyrophosphate decahydrate.
