Sodium pyrophosphate is also one of the food additives. So, what is the applicable scope and dosage of food additive sodium pyrophosphate?


In recent years, with the frequent occurrence of food safety problems, food additives have become synonymous with profit-making, illegal and harm, which has aroused extensive social hot discussion and criticism. Application scope and dosage of food additive sodium pyrophosphate:

(1) For canned pork sausage, compound phosphate (sodium pyrophosphate 60%, sodium tripolyphosphate 40%) is added when chopping and mixing meat.

(2) Canned poultry such as duck Sibao, duck wings with mushrooms and stewed duck with mushrooms are easy to release hydrogen sulfide during heating. Hydrogen sulfide reacts with iron ions in the tank to produce black iron sulfide, which affects the quality of finished products. Adding compound phosphate has a good chelating effect on metal ions and can improve the quality of finished products.

(3) It is used for soy sauce and soybean paste. The dosage is about 0.005% ~ 0.3%, which can prevent soybean paste from browning and improve its color.

(4) It can be used as a melting agent and emulsifier of cheese, release calcium ions from calcium caseinate in cheese, increase the viscosity of casein, and obtain soft and extensible products. Generally, sodium pyrophosphate, orthophosphate and metaphosphate are used in combination, and the dosage shall not exceed 0.9% (calculated by P).

(5) It is used for surimi products abroad, with compound phosphate (60% sodium pyrophosphate and 40% sodium tripolyphosphate).
